Carrot is valued as food mainly because it is rich source of alpha and beta carotene.The total carotenoid content in the edible portion of carrot roots ranges from 6 to 54.8 mg/100 g.The yellow and orange carrots contain relatively more carotenoid .The predominant carotenoids in orange colored carrots are alpha,beta and gamma carotene.Carrots also contain anthocyanin .Green carrot leaves are rich in protein,minerals and vitamins.
Carrots are credited with many medicinal properties.
-they r said to cleanse the intestine and to be diuretic.
-remineralizing,anti-diarrheal,allergies,anemia rheumatism,intestinal inflammation.
-an overall tonic and anti-emetic and emmenagogue(producing oils which stimulates flow of menstrual blood).
Carrots are rich in alkaline elements which purify and revitalize the blood.they nourish the entire system and help in the maintenance of acid-alkaline balance in the body.It also regulates u r eye-sight.raw carrot (grated) can be applied as a compress to burns for a soothing effect.Its juice when taken has beneficial effect on the liver.
Carrots when consumed in excess turn skin to yellow called as carotemia caused by the carotene contained in carrot .It is frequently seen in children but is not at all dangerous.An infusion of carrot seeds(1 teaspoon per cup of boiled water)is believed to be diuretic,to stimulate appetite,reduce colic,aid fluid retention help alleviate menstrual cramps.The dried flowers are also used as tea for remedy to dropsy.
Taken in wine or boiled in wine the seeds help in conception.The seeds made into a tea have been seed as contraceptives for centuries.Chewing a carrot after food ills harmful germs in the mouth and prevents bleeding of gum's and tooth decay. Wild carrot tea is recommended for bladder and kidney ailment,dropsy,gout,gravel:seeds are recommended for calculus obstructions in viscera ,jaundice,scurvy.They aso stimulate milk flow during lactation(galactogogue).It is also effective against roundworms and dandruff.

Massive over consumption of carrots can cause hypercarotenemia, a condition in which the skin turns orange although hypercarotenemia is not itself dangerous unlike overdose of vitamin A, which can cause liver damage.Since Carrots are also rich in dietary fibre, antioxidants, and minerals.

You mentioned the advantages of carrot, yeah it seems peoples are aware of carrot's benefits hence it is a usual part of our food either as salad, main course & most famous Gajar ka halwa. But peoples are attracting more towards its juices, you can observe that in many cities carrot juices are available in more stalls & peoples are preferring that over other juices.
